Using Van Dorn Gourmets’ BBQ Spice Rub

        Ingredients
        4 cloves garlic, minced
        8 Tablespoons butter 
        4 ribs celery, diced
1 medium onion, diced
8 cups fresh corn kernels
1/4 cup flour
2 cups chicken stock
1 cup half & half
1 cup milk
1 Tablespoon Van Dorn Gourmets BBQ Spice Rub
Salt and pepper
1 fresh red pepper, diced for garnish (if desired)

Directions
Melt the butter in a large saucepan over low heat.  Add garlic, celery, and onions and cook, stirring often until vegetables are soft but not browned, 12-14 minutes. Add corn and BBQ Spice Rub, and cook, stirring occasionally, until corn is soft and fragrant, 18-20 minutes. Vigorously whisk in flour, then add chicken stock, half & half, and milk.  Simmer, stirring occasionally for 15 minutes.  Salt and pepper to taste.  Serve in soup bowls topped with diced red peppers.
Makes 6-8 servings
